Purpose
To understand and apply the concept of the vegetarian diet by selecting and consuming an all plant based healthy meal. Following a strict "vegan" diet can be challenging. The benefits of a plant based diet include the reduction in numerous diseases, including obesity, heart disease and diabetes. Just how easy a strict vegetarian diet is to follow is another story.  This activity requires you to eat a strict vegetarian diet for one meal and evaluate it from both a nutritional and enjoyment perspective. By replacing just a couple of animal protein meals per week, you can reduce the intake of saturated fat and cholesterol that is found in meats, fish and poultry as well as in their byproducts. Â
