Company background The SF group is in the food processing and production business. The group comprises 42 companies, each of which specialises in a particular food. For example, some companies manufacture sweets and confectionery whereas others produce bread, drinks or other basic consumer foods. One of the companies in the group, JTK Ltd, produces bread, cakes and similar products. It produces 3 million loaves of bread each day and supplies 15 per cent of the total bread demand for the country in which it operates. JTK Ltd’s strategy is to sell as much bread as possible, making only a small margin on each loaf sold. This strategy has worked well in the past because most customers base their decision to purchase bread more on the price than the quality of the product. Over the past 20 years, JTK Ltd has had two instances of adverse publicity about the quality of its bread. As a result of these, JTK Ltd ensured that the quality of the product was improved and quickly regained its market share.

Production Process The bread manufacturing system is based on the feedback model. This is shown diagrammatically above. Average raw material stocks have shown a small but marked increase over the last 5 years, although suppliers have improved the efficiency of their delivery systems. The production process is operating at full capacity. Different staff work in the quality control department each day, on a rotation basis. Results from the day’s quality control checks are pinned to a noticeboard along with summaries of changes to input mixes and any problems. This attempts to ensure that information concerning each day’s quality control checks reaches the staff working on the next day
